Cheesemaking, Stafford

“Once someone learns how to make one type of cheese, they crave more and more, and before you know it, the house is filled with hundreds of different cheeses!”

Could Brisbane’s Northside be put on the map as the new gourmet cheese capital – joining the likes of Tasmania, France, Italy?

Graham Redhead, founder of Stafford-based Cheesemaking, is helping inject a little ‘dairy’ into our lives with gourmet cheese-making courses. Growing up on a small family dairy farm, Graham, from a young age could be found waking up early milking cows – with a love and passion for cheese-making evolving as a result.

Cheddar, Italian style fresh mozzarella, creamy brie, tangy quark, whole milk ricotta, Persian feta… just some of the varieties that cheese-making students can learn how to create at one of Graham’s courses. Check out the two-day course options: http://www.cheesemaking.com.au

Now, anyone else in the mood for some wine with cheese tonight?
